The gold standard of Toronto coffee

Every visit to Pilot reminds me why I fell in love with specialty coffee. The baristas are incredibly knowledgeable and the rotating single-origin pour-overs are always a revelation. The space itself is gorgeous - watching the roasting happening in the background adds to the whole experience.

Consistently excellent

Pilot never disappoints. The espresso is always perfectly dialed in and the staff clearly care about what they do. Only reason it's not 5 stars is that it can get very crowded on weekends. Pro tip: go early on a weekday morning for the best experience.
